Okay, I’ll admit it. It doesn’t sound super appetizing. But don’t be all judgy and think less of me because I like imitation crab. Honestly, the idea of “scrambled crab eggs,” or maybe a better word choice of “crab scrambled eggs,” scratch that———— Let’s try again.
Scrambled eggs with crab. Okay yeah, that sounds less disturbing. Anyway, the idea came to me when I was reading a book… Ahem, listening to a book on Audible. In the book, there was a well-to-do couple enjoying brunch by the sea feasting on Lobster Scrambled Eggs. (Why does Lobster Scrambled Eggs not sound as weird?)
I don’t know; maybe it was a few hours into yet another failed fasting day in which I try to recover from a binge day, which is often the result of an attempted fasting day. Regardless, after hearing about their seafood brunch I was lamenting the fact that I may never have lobster scrambled eggs by the sea, when I remembered the crab snack pack in my fridge.
I had purchased it earlier that week when I planned to start the Keto diet. For the record, imitation crab is loaded with carbs and not Keto friendly. I’m betting real crab is Keto friendly, but imitation crab must be made of white bread and sugar cubes because it is carb rich. Oh, and it’s also delicious drenched in butter. Yes it is, don’t judge me.
But do you know what is even more delicious than imitation crab and butter?
Scrambled Eggs WITH Crab
- I used 7 eggs, because I never make anything that I don’t have to share with my kids.
- Pepper and Salt to taste, I use the pink Himalayan Salt from Costco, but you can also get here
- Delicious Seafood snack pack, 5 for $5 at Smith’s (Kroger)
- Dice and sauté in a Tablespoon or 4 of butter
- Add eggs, scramble, and top with cheese.
Oh, and my pans are amazing! I did a Facebook poll a few months back asking for pan suggestions because EVERYTHING was sticking my fancy nonstick ceramic Fiesta-ware pans and I was fit to be tied. Endless suggestions but there was an overwhelming consensus that the pans were the way to go.
I was skeptical, because I had a GreenLife pan years ago when they first came out, and it was junk. Worked for about a week then everything STUCK. But they have made some improvements, and these are amazing. Going on five months and they are just as awesome as they were when I got them. Plus they are pretty!
You would have to like crab. I am not much of a seafood person but this is really interesting.
True! It was really good, but you would definitely have to appreciate seafood…or pretend seafood. ?
